Update metadata: add pipeline tag and remove arXiv ID from YAML

This PR improves the model card metadata by:
- Adding `pipeline_tag: image-segmentation` so the model is categorized correctly.
- Removing the `arxiv:2610.28490` tag from the YAML metadata, since the arXiv link is already present in the markdown content.

The markdown content is left unchanged.
