Fix runtime: upgrade to actively-maintained gradio 6.26.0 instead of patching legacy 4.44.1 stack

Pinning individual transitive deps (huggingface_hub, pydantic) against
gradio==4.44.1 turned into whack-a-mole: each fix surfaced a new
incompatibility with today's PyPI-latest packages (audioop/python 3.13,
HfFolder removal, pydantic JSON-schema regression, and finally a
Jinja2/TemplateResponse "unhashable dict" crash in gradio_client's
bundled routes on the resolved starlette version). Verified locally
end-to-end (real app.py, real YOLO + ResNet50 weights, real sample
image via gradio_client) that gradio==6.26.0 resolves a clean,
mutually-compatible dependency set with no manual pins needed for
fastapi/starlette/pydantic/huggingface_hub. sdk_version bumped to match.
