Add embeddings API, caching, and Docker revamp
Implement embeddings endpoint (router, service, schemas) using sentence-transformers and configurable embedding model. Add a TTL cache and concurrent alternative-language fallback to the subtitles service. Introduce rate limiting (slowapi), timing-safe API key verification and updated API key middleware. Replace Dockerfile with a multi-stage builder/runtime image, set model cache dirs, bump package version to 1.0.0, and update README, tests, .env.example, and .gitignore (ignore models/)781f7b0
