Phase 4/5: add demo video (Git LFS), finalize README + docs
- docs/demo.mp4 tracked via Git LFS (both GitHub and HF accept it; HF rejects >10MB non-LFS). - README: working video links, Demo-video section, Phase 4/5 marked done. - .dockerignore: shrink the HF Spaces build context (docs/media/venv/proof-tier excluded). - ui.py: video-slot fallback points to docs/demo.mp4.60b173e
