Add pipeline tag and remove arxiv tag from metadata

This PR updates the YAML metadata to add pipeline_tag: text-ranking, making the model discoverable under the appropriate pipeline filter. It also removes the arxiv tag from the YAML metadata, since arXiv IDs should only appear in the markdown content. The existing model card content already links to the paper and remains unchanged.
