Update pipeline tag and add project page link

This PR updates the pipeline tag from text-classification to other to accurately reflect the model's purpose (span-level uncertainty quantification for LLM generation), which is not a standard text classification task. It also adds a link to the project page (https://damon-demon.github.io) in the Related Resources section for easier access to additional information about SpanUQ.
